A proper ceramic coating needs decontamination, paint preparation and controlled application — time a handover package rarely allows — whereas dealer "protection" is often a quick sealant applied over whatever marring is already there. If you want protection that lasts years rather than months, it is worth having it done properly.
No — no coating is scratch-proof. It improves chemical resistance, makes washing easier and holds gloss for longer, but careful wash technique still matters most. If stone chips and impact damage are your real concern, that needs paint protection film, which is a different product.
